Cocktail-Inspired Honey FermentIntermediateDevelopment

Margarita-Style Honey Ferment

A cocktail-inspired honey ferment that captures the bright, citrus-forward character of a classic margarita. Lime juice and zest provide tartness and aroma; a small orange addition adds depth. A finishing salt addition (optional) rounds the profile. Targets 8% ABV with a semi-dry finish and light carbonation. This is an owner-formulated development direction. Formulation is editorial development based on the margarita flavor profile; values are estimated.

Ingredients

  • 8 lbsClover or orange blossom honey

A light, neutral honey lets the citrus character dominate.

  • 4.5 gallonsFiltered water

Chlorine-free. Adjust for lime juice volume.

  • 16 ozFresh lime juice

Add in secondary after primary fermentation. Fresh-squeezed preferred.

  • 6 eachOrganic lime zest

Zest of 6 limes, without pith. Add with lime juice in secondary.

  • 2 eachOrganic orange zest

Zest of 2 oranges. Adds orange liqueur character. Add in secondary.

  • 0.5 tspFlaked sea salt (finishing addition)(optional)

Optional finishing addition. Add at packaging to taste. Enhances citrus perception.

  • 5 gFermaid-O (organic yeast nutrient)

    Split across TOSNA schedule.

  • 1 packetsPotassium metabisulfite (Campden tablet)(optional)

    For water treatment.

Yeast

Lalvin Lalvin 71B — 1 packets

71B partially metabolizes malic acid, complementing citrus acidity. Well-suited to medium-gravity citrus ferments.

Process

  1. Sanitize all equipment

Prepare no-rinse sanitizer solution. Sanitize all vessels and tools.

  2. Prepare must

Dissolve honey in filtered water. Mix to achieve target OG of approximately 1.060.

  3. Take original gravity reading

    Record OG. Target approximately 1.060.

  4. Pitch yeast

Pitch Lalvin 71B. Add first Fermaid-O addition. Ferment at 65–70°F.

  5. Nutrient additions

Follow the TOSNA nutrient schedule. Degas before each addition.

  6. Monitor primary fermentation

Check gravity every few days. Primary fermentation typically completes in 2–4 weeks.

  7. Add citrus in secondary

Rack the mead off the lees. Add lime juice, lime zest, and orange zest. Allow to macerate for 5–7 days, tasting for citrus intensity.

  8. Condition and clarify

Condition for 4–8 weeks. Rack as needed.

  9. Add finishing salt (optional)

If using, add flaked sea salt to taste at packaging. Start with 0.25 tsp and adjust.

  10. Carbonate and package

Carbonate to approximately 1.5–2.0 volumes CO2 for a petillant finish.

Packaging

Ensure fermentation is fully complete before carbonating. Use vessels rated for carbonation pressure.

Safety notes

  • Never seal a bottle of mead that has not fully finished fermenting.
  • Lime juice is highly acidic and can affect yeast health if added during active fermentation. Add in secondary only.
  • Sanitize all equipment that contacts the must or finished mead.
  • Nutrient additions do not scale linearly. Recalculate for any batch size change.
  • This recipe has not been confirmed as production-proven. Do not present as a validated commercial formulation.

Scaling notes

This recipe is written for a 5-gallon batch. Honey and citrus quantities scale linearly. Nutrient additions do NOT scale linearly — recalculate for any target volume. Salt addition is a finishing element and should be adjusted to taste regardless of batch size.

⚠ Ingredients requiring review

  • Flaked sea salt (finishing addition): Ingredient "Flaked sea salt (finishing addition)" (id: sea-salt) requires manual review before scaling. The original quantity is shown — do not use without recalculating.
  • Fermaid-O (organic yeast nutrient): Ingredient "Fermaid-O (organic yeast nutrient)" (id: fermaid-o) requires manual review before scaling. The original quantity is shown — do not use without recalculating.
Scaled quantities are mathematical estimates. Fermentation performance, yeast requirements, nutrient schedules, vessel headspace, temperature control, and legal requirements must be reviewed for the target batch size.
