Ingredients

  • 7 lbsBuckwheat honey

Buckwheat honey provides a dark, molasses-forward character. Can blend with wildflower for balance.

  • 3 lbsWildflower honey (blend)(optional)

Optional blend to balance buckwheat intensity. Adjust ratio to taste.

  • 4.75 gallonsFiltered water

    Chlorine-free.

  • 0.5 lbsFresh ginger, sliced

Add in secondary for best aroma retention. Steep 5–7 days.

  • 4 eachOrganic lime zest

Zest of 4 limes, without pith. Add with ginger in secondary.

  • 6 gFermaid-O (organic yeast nutrient)

    Split across TOSNA schedule.

  • 1 packetsPotassium metabisulfite (Campden tablet)(optional)

    For water treatment.

Yeast

Lalvin Lalvin EC-1118 — 1 packets

EC-1118 produces a clean, neutral profile that lets the buckwheat honey and ginger character shine. Suitable for medium-to-high gravity ferments.

Process

  1. Sanitize all equipment

Prepare no-rinse sanitizer solution. Sanitize all vessels and tools.

  2. Prepare must

Dissolve buckwheat honey (and wildflower blend if using) in filtered water. Mix to achieve target OG of approximately 1.075.

  3. Take original gravity reading

    Record OG. Target approximately 1.075.

  4. Pitch yeast

Pitch EC-1118. Add first Fermaid-O addition. Ferment at 65–72°F.

  5. Nutrient additions

Follow the TOSNA nutrient schedule. Degas before each addition.

  6. Monitor primary fermentation

Check gravity every few days. Primary fermentation typically completes in 3–6 weeks.

  7. Add ginger and lime zest in secondary

Rack the mead off the lees. Add sliced ginger and lime zest in a straining bag. Steep for 5–7 days, tasting for spice and citrus intensity.

Ginger heat increases with steeping time. Taste daily after day 3.

  8. Remove botanicals and condition

Remove ginger and lime when desired intensity is achieved. Condition for 3–6 months.

  9. Package

When clear and stable, package into sanitized bottles.

Packaging

Ensure fermentation is fully complete and gravity is stable before packaging. Sanitize all bottles and equipment.

Safety notes

  • Never seal a bottle of mead that has not fully finished fermenting.
  • Sanitize all equipment that contacts the must or finished mead.
  • Nutrient additions do not scale linearly. Recalculate for any batch size change.
  • This recipe has not been confirmed as production-proven. Do not present as a validated commercial formulation.

Scaling notes

This recipe is written for a 5-gallon batch. Honey and botanical quantities scale linearly. Nutrient additions do NOT scale linearly — recalculate for any target volume.

⚠ Ingredients requiring review

  • Fermaid-O (organic yeast nutrient): Ingredient "Fermaid-O (organic yeast nutrient)" (id: fermaid-o) requires manual review before scaling. The original quantity is shown — do not use without recalculating.
Scaled quantities are mathematical estimates. Fermentation performance, yeast requirements, nutrient schedules, vessel headspace, temperature control, and legal requirements must be reviewed for the target batch size.
