Morning Tonic Botanical Session Mead

A light, refreshing botanical session mead at 2.0% ABV. Fresh ginger, lemon zest, turmeric, and black pepper are cold-steeped and fermented with wildflower honey for a bright, complex low-alcohol beverage. A small addition of raw apple cider vinegar after fermentation adds a clean acidity. Lightly carbonated at 2.3–2.5 volumes CO2. This is a Chapter 11 Cellars anchor formulation. Exact water volume and production completion status are estimated values pending owner confirmation.

Ingredients

  • 70 lbsWildflower honey

Owner anchor: 70 lbs wildflower honey for ~93-gallon batch.

  • 95 gallonsFiltered water

Estimated starting water volume. Honey and botanical additions bring gross must volume to approximately 100 gallons. Owner must confirm actual water volume used.

  • 2.25 lbsFresh ginger, sliced

Owner anchor: 2.25 lbs. Cold-steep 12–18 hours before fermentation.

  • 19 eachOrganic lemon zest (without pith)

Owner anchor: zest of 18–20 organic lemons, without pith. Cold-steep with other botanicals.

  • 3 tbspTurmeric powder (or fresh turmeric)

Owner anchor: 3 tbsp powder OR ~0.5 lb fresh turmeric. Cold-steep with other botanicals.

  • 0.5 tspBlack pepper

Owner anchor: 0.5 tsp. Enhances botanical integration.

  • 0.75 cupsRaw apple cider vinegar

Owner anchor: 0.75 cup. Added AFTER fermentation is complete. Adds clean acidity.

  • 7 gFermaid-O (organic yeast nutrient)

Owner anchor: ~6–8 g. Low-gravity batch requires minimal nutrients.

Yeast

Fermentis / Lalvin US-05 or Lalvin 71B — 4 packets

Owner anchor specifies US-05 or Lalvin 71B. Both are appropriate for low-gravity session meads. US-05 produces a clean, neutral profile; 71B adds slight ester character. Owner to confirm strain selection.

Nutrient schedule

TimingNutrientQtyNotes
Day 0 (pitch)Fermaid-O3.5 gHalf of total dose at pitch. Low-gravity batch ferments quickly.
24 hours after pitchFermaid-O3.5 gRemaining dose. Monitor gravity — low-gravity fermentation may complete in 3–5 days.

Process

  1. Sanitize all equipment

Prepare no-rinse sanitizer solution. Sanitize all vessels, tools, and transfer equipment.

  2. Cold-steep botanicals

Combine sliced ginger, lemon zest, turmeric, and black pepper in straining bags. Steep in cold filtered water for 12–18 hours. Do not heat — cold-steeping preserves volatile aromatics.

Owner anchor specifies cold-steep. Do not substitute hot infusion without owner confirmation.

  3. Prepare must

Dissolve 70 lbs wildflower honey in the botanical steep water. Mix thoroughly to achieve target OG of approximately 1.023.

  4. Take original gravity reading

    Record OG. Target approximately 1.022–1.024.

  5. Pitch yeast

Pitch US-05 or Lalvin 71B. Add first Fermaid-O addition. Ferment at 64–68°F.

Low-gravity fermentation is fast — monitor closely to avoid over-attenuation.

  6. Monitor fermentation

Check gravity daily. Low-gravity fermentation may complete in 3–7 days. Target FG approximately 0.998–1.002.

  7. Add apple cider vinegar

When fermentation is complete, add 0.75 cup raw apple cider vinegar. Stir gently to combine.

Add ACV after fermentation — adding during fermentation may affect yeast health.

  8. Rack and condition

Rack off lees and botanical solids. Condition for 2–4 weeks.

  9. Carbonate

Carbonate to 2.3–2.5 volumes CO2 using forced CO2 or priming sugar. Owner to confirm carbonation method.

  10. Package

Package into kegs or bottles rated for carbonation pressure.

Packaging

Ensure fermentation is fully complete before carbonating. Use vessels rated for carbonation pressure. Owner to confirm specific packaging format and carbonation method.

Safety notes

  • Never seal a bottle of mead that has not fully finished fermenting — residual fermentation in a sealed bottle can cause dangerous pressure buildup and bottle explosions.
  • This recipe produces a carbonated beverage. Use only bottles or kegs rated for carbonation pressure.
  • Sanitize all equipment that contacts the must or finished mead.
  • No health claims are made about any botanical ingredient in this recipe. Ginger, turmeric, and lemon are flavoring agents only.
  • This recipe has not been confirmed as production-proven. Do not present as a validated commercial formulation.

Scaling notes

This recipe is written for a three-barrel (93-gallon net) batch. Honey and botanical quantities scale linearly with batch volume. Nutrient additions do NOT scale linearly — recalculate for any target volume. Water volume is estimated and must be confirmed by the owner.

⚠ Ingredients requiring review

  • Fermaid-O (organic yeast nutrient): Ingredient "Fermaid-O (organic yeast nutrient)" (id: fermaid-o) requires manual review before scaling. The original quantity is shown — do not use without recalculating.
Scaled quantities are mathematical estimates. Fermentation performance, yeast requirements, nutrient schedules, vessel headspace, temperature control, and legal requirements must be reviewed for the target batch size.
