Ingredients

  • 3.5 lbsWildflower or orange blossom honey

Light honey lets hibiscus and lime character shine.

  • 5 gallonsFiltered water

    Chlorine-free.

  • 4 ozDried hibiscus flowers (Jamaica)

Add in secondary for best color and flavor. Steep 3–5 days.

  • 4 eachOrganic lime zest

Zest of 4 limes, without pith. Add with hibiscus in secondary.

  • 2 gFermaid-O (organic yeast nutrient)

    Low-gravity batch requires minimal nutrients.

  • 1 packetsPotassium metabisulfite (Campden tablet)(optional)

    For water treatment.

Yeast

Lalvin Lalvin 71B — 1 packets

71B partially metabolizes malic acid, complementing hibiscus acidity. Rehydrate per manufacturer instructions.

Process

  1. Sanitize all equipment

Prepare no-rinse sanitizer solution. Sanitize all vessels and tools.

  2. Prepare must

Dissolve honey in filtered water. Mix to achieve target OG of approximately 1.026.

  3. Take original gravity reading

    Record OG. Target approximately 1.026.

  4. Pitch yeast

Pitch Lalvin 71B. Add first Fermaid-O addition. Ferment at 65–70°F.

  5. Monitor primary fermentation

Check gravity daily. Low-gravity fermentation may complete in 3–7 days.

  6. Add hibiscus and lime zest in secondary

Rack the mead off the lees. Add dried hibiscus flowers and lime zest in a straining bag. Steep for 3–5 days, tasting daily for color and flavor intensity.

Hibiscus color and flavor extract quickly. Taste daily to avoid over-extraction.

  7. Remove hibiscus and condition

Remove hibiscus bag when desired color and flavor is achieved. Condition for 2–4 weeks.

  8. Carbonate

Carbonate to approximately 2.3–2.5 volumes CO2.

  9. Package

Package into bottles or kegs rated for carbonation pressure.

Packaging

Ensure fermentation is fully complete before carbonating. Use vessels rated for carbonation pressure.

Safety notes

  • Never seal a bottle of mead that has not fully finished fermenting.
  • This recipe produces a carbonated beverage. Use only bottles or kegs rated for carbonation pressure.
  • Sanitize all equipment that contacts the must or finished mead.
  • Nutrient additions do not scale linearly. Recalculate for any batch size change.

Scaling notes

This recipe is written for a 5-gallon batch. Honey and botanical quantities scale linearly. Nutrient additions do NOT scale linearly — recalculate for any target volume.

⚠ Ingredients requiring review

  • Fermaid-O (organic yeast nutrient): Ingredient "Fermaid-O (organic yeast nutrient)" (id: fermaid-o) requires manual review before scaling. The original quantity is shown — do not use without recalculating.
Scaled quantities are mathematical estimates. Fermentation performance, yeast requirements, nutrient schedules, vessel headspace, temperature control, and legal requirements must be reviewed for the target batch size.
