Ingredients

  • 6 lbsWildflower honey
  • 3 lbsPale malt extract (liquid)

Provides malt character and fermentable sugars.

  • 4.5 gallonsFiltered water
  • 1 ozCascade hops (pellets)

Add at 60 minutes for bittering. Adjust to taste.

  • 8 gFermaid-O

Yeast

Lalvin Lalvin EC-1118 — 1 packets

Process

  1. Sanitize all equipment

Prepare no-rinse sanitizer. Sanitize all vessels and tools.

  2. Prepare wort

Heat 3 gallons of water to 150°F. Dissolve malt extract. Bring to a boil. Add hops at 60 minutes. Boil for 60 minutes total.

  3. Cool wort

Cool wort to below 80°F using an ice bath or wort chiller.

  4. Add honey

Add honey to the cooled wort. Stir to dissolve.

  5. Transfer to fermenter

Transfer to fermenter. Top up with filtered water to 5.5 gallons.

  6. Take OG reading

Record original gravity. Target approximately 1.060.

  7. Pitch yeast and nutrients

Pitch EC-1118. Add Day 0 nutrients. Ferment at 65–72°F.

  8. Staggered nutrient additions

Follow TOSNA schedule. Degas before each addition.

  9. Monitor fermentation

Check gravity every few days. Fermentation typically completes in 3–5 weeks.

  10. Condition

    Condition for 2–4 months.

  11. Carbonate and package

Carbonate to approximately 2.5 volumes CO2. Package into pressure-rated bottles.

Packaging

Ensure fermentation is fully complete before carbonating. Use vessels rated for carbonation pressure.

Safety notes

  • Never seal a bottle of braggot that has not fully finished fermenting.
  • This recipe produces a carbonated beverage. Use only bottles or kegs rated for carbonation pressure.
  • Sanitize all equipment that contacts the wort, must, or finished braggot.

Scaling notes

Honey, malt extract, and water scale linearly. Hops do NOT scale linearly — adjust to taste. Nutrient additions do NOT scale linearly.

  • Cascade hops (pellets): Ingredient "Cascade hops (pellets)" (id: hops) requires manual review before scaling. The original quantity is shown — do not use without recalculating.
  • Fermaid-O: Ingredient "Fermaid-O" (id: fermaid-o) requires manual review before scaling. The original quantity is shown — do not use without recalculating.
Scaled quantities are mathematical estimates. Fermentation performance, yeast requirements, nutrient schedules, vessel headspace, temperature control, and legal requirements must be reviewed for the target batch size.
