Process

  1. Prepare bourbon-soaked oak

Soak heavy-toast American oak cubes in bourbon for 24 hours. Drain before adding to mead.

  2. Sanitize all equipment

Prepare no-rinse sanitizer. Sanitize all vessels and tools.

  3. Build must

Dissolve honey in 1 gallon of warm water. Cool. Add to fermenter with apple juice and remaining water to 5.5 gallons.

  4. Take OG reading

Record original gravity. Target approximately 1.075.

  5. Pitch yeast and nutrients

Pitch Lalvin 71B. Add Day 0 nutrients. Ferment at 60–65°F.

  6. Staggered nutrient additions

Follow TOSNA schedule. Degas before each addition.

  7. Monitor fermentation

Check gravity every few days. Fermentation typically completes in 3–5 weeks.

  8. Add bourbon-soaked oak in secondary

Rack. Add bourbon-soaked oak cubes. Taste weekly. Remove when desired oak and bourbon character is achieved (typically 2–4 weeks).

  9. Remove oak and condition

Remove oak cubes. Condition for 4–8 months.

  10. Package

    Bottle or keg.

Packaging

Ensure fermentation is fully complete before packaging.

Safety notes

  • Never bottle a mead that has not fully finished fermenting.
  • Apple juice must be preservative-free.
  • Sanitize all equipment that contacts the must or finished mead.
