Process

  1. Toast coconut

Spread shredded coconut on a baking sheet. Toast at 350°F for 8–10 minutes until golden. Cool completely.

  2. Sanitize all equipment

Prepare no-rinse sanitizer. Sanitize all vessels and tools.

  3. Build honey must

Dissolve honey in 1 gallon of warm water. Cool. Add to fermenter with remaining water to 5.5 gallons.

  4. Take OG reading

Record original gravity. Target approximately 1.098.

  5. Pitch yeast and nutrients

Pitch EC-1118. Add Day 0 nutrients. Ferment at 65–72°F.

  6. Staggered nutrient additions

Follow TOSNA schedule. Degas before each addition.

  7. Monitor primary fermentation

Check gravity every few days. Primary typically completes in 3–5 weeks.

  8. Add toasted coconut in secondary

Rack onto toasted coconut in a sanitized muslin bag. Allow 1–2 weeks of contact. Taste regularly.

Coconut can add oils that affect head retention and clarity. Extended contact may cause haze.

  9. Remove coconut and condition

Remove coconut bag. Condition for 3–6 months.

  10. Package

    Bottle or keg.

Packaging

Ensure fermentation is fully complete before packaging.

Safety notes

  • Never bottle a mead that has not fully finished fermenting.
  • Coconut oils can cause haze — use fining agents if clarity is important.
  • Sanitize all equipment that contacts the must or finished mead.

Scaling notes
